You Will Need:
1 whole wheat small pita, 2 tsp of olive oil, 1 small onion, 4 pieces of sun-dried tomatoes, 5 chopped olives, a few slices of red bell pepper, 85g of soft tofu in thin slices and some mushrooms.
Rob the two tsp of olive oil into the pita, focusing on the borders to prevent it from over cooking, add the slices of soft tofu, top it off with the vegetables and salt it to your taste. Put it in the over at 325 degrees for approximately 35 minutes or until the vegetables are getting a bit brown.
