The stuffed omelet

1 small onion, 4 cherry tomatoes or 1 small regular ripe tomato,  1/2 cup of spinach, 2 tbsp of  babaganoush(eggplant dip), 2 tbsp of olive oil, 1 cup of egg-whites (May be Egg Creations type)

In a stick-free pan, low heat, sauté the onion first for a minute, then add the tomatoes for another minute. Remove and pour the egg-whites in the pan (salt & pepper are optional here). Cover it and let it cook on low for 1-2 minutes. Add the babaganoush in the middle, put the spinach, then on top the onions and tomatoes and fold it over. Cover it for 30 seconds on each side. When ready on the plate, add 2 tbsp of olive oil on top.
